Wash the sesame leaves, bean sprouts, enoki mushrooms, and chives. Cut the enoki mushrooms and chives into about 6cm lengths.
Cut the sweet pumpkin into cubes and slice the lotus root into 0.5cm slices.
Sprinkle starch on top of the chuck tender, place the sesame leaves on top, then sprinkle more starch over the leaves. Add the chives, enoki mushrooms, and bean sprouts, and roll it up.
Place the sweet pumpkin and lotus root in a steamer. Once the steam rises, layer the remaining bean sprouts on the bottom, then place the rolled beef in sesame leaf on top and steam for about 3 minute
Prepare the sauce with the specified amounts of ingredients and enjoy it.
